Fall Harvest Quinoa Salad


This recipe is fast becoming a staple in our home. The fresh fall inspired ingredients are sure to impress! Simple, healthy and delicious!! 

Fall Harvest Quinoa Salad



  • 2 cups cooked quinoa (follow package instructions)
  • 1 baked sweet potato (peeled and tossed in olive oil-bake for 30 min at 350 degrees)
  • 4 cups arugula
  • 1 diced green apple
  • 1 diced shallot 
  • 1/2 cup toasted pecans
  • 1/2 cup crumbled goat or feta cheese

For the dressing

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp cinnamon 
  • 1 tsp ginger
  • 1 TBPS maple syrup
  • Salt, pepper and garlic to taste 


1. Whisk all dressing ingredients together and set aside

2. Place all salad ingredients in a bowl and toss with dressing right before serving

3. Saves well for up to two days in the refrigerator once dressed
