What I’m Loving This Month

It really is true that it’s the small things that give us the most joy; when you find $5 in an old purse, when your partner brings you hot tea on a cold day, or heck - when anyone empties the dishwasher unasked. We can find happiness in the smallest of moments, and that’s what my “favorite things” lists are about - taking time to be grateful and notice what’s filling my cup this month.

My 6 Favorite Things Right Now

1. A Chill Playlist

This playlist is full of chill music for when you want to relax on the couch with a cup of tea, watch the leaves fall, or get cozy by the fire. Snuggle up and stay warm, my friends! Listen on Apple Music or on Spotify

2. Eggplant Fries

Cut up the eggplant into fry-shaped wedges, then dip in whole wheat flour, then egg, then breadcrumbs. Pop them into the air fryer for 10 minutes at 375, and enjoy! These were amazingly delicious and also very crispy, thanks to the large amount of air that is found naturally in eggplants. Just pick one up and you’ll notice how light they are. You can have fun with this and add your favorite seasonings to the breadcrumbs, but we loved the basic recipe as-is and dipped them in marinara sauce. Watch me make eggplant fries in this reel.

3. Creamy Zucchini Shakes?

Yes! It’s true. Zucchini will make your smoothies super creamy, and you can’t even taste them. Slice up your extra zucchini and keep them in a ziplock bag in the freezer. When it’s smoothie time, throw some frozen zucchini in there for a creamy treat with added vitamins and minerals. Right now my go-to smoothie recipe is: 1 scoop Cookies & Creamy Shakeology, half a banana, a handful of spinach, and some zucchini.

4. Dr. Bronner’s Rose Castile Soap

Castille soap is a great all-in-one product to save you from having different cleaning products for each job. It’s also safe, gentle, and environmentally friendly. I use it in the shower for body wash and shave gel, and I’ve learned to make a magic laundry paste to treat stains in clothes. I don’t measure anything, but make a paste with a squirt of Dr. Bronner’s castile soap, a squirt of hydrogen peroxide, and baking soda. Mix it up, squish it onto the stain, and leave until it’s dry. Toss in the wash, and you’ll be amazed at what stains this can get out.

5. Girls Wool Tights

My daughter loves to wear dresses, but it gets pretty cold in Colorado in the winter! We had these tights last year, and they were soft, warm, and lasted the season; so we just bought a set to fit her this year.

6. Peppermint Essential Oil

I love to diffuse peppermint oil to get the stink out of a room. It’s like a magic, natural air purifier to get rid of diaper smells, dinner odors, or whatever stink is lurking around. And if you have young kids, it’s not unusual to play the “what’s that smell?!” game now and then. Hot tip: check under the couch.
