Three Fall Recipes on Repeat

Fall food is upon us, so embrace the season. These recipes are warming, simple, healthy, not messy to make (yay!), and super family-friendly.

Pumpkin Spice Mug Cake

Mug cakes have kind of changed my life. They sound (and taste) decadent, but can be filling and healthy, too. This version is dairy and gluten free, and comes together in less than 5 minutes start to finish. 

In a mug, combine: 

  • ¼ cup almond flour

  • ⅓ cup unsweetened pumpkin purée

  • 1 tsp chocolate chips

  • 1 egg

  • ¼ tsp Cinnamon or pumpkin pie spice - or less, depending on your preference

Cook on high in the microwave for 2½ to 3 minutes, and top with vanilla Greek yogurt for an amazing breakfast everyone will love.

Three-Ingredient Apple Butter

I had never made apple butter before, but it is so freaking easy and delicious, and we can’t get enough of it. We like it on toast, in yogurt, on oatmeal - pretty much everything!

How to Make Apple Butter:

  1. Core and chop up about 2 pounds of apples. Leave the peel on. 

  2. Throw them in your slow cooker or instant pot.

  3. Sprinkle with your favorite spices. I use about 2 TBSP brown sugar and 1tsp of cinnamon. But you could try apple pie spice, pumpkin pie spice, nutmeg, or maple syrup. 

  4. Set your cooker to low, and leave for about 8 hours. Be warned - the house is going to smell amazing. 

  5. Use an immersion blender to mash the apples to your desired consistency. 

That’s it! About 5 minutes of prep, totally hands-off, and simply delicious.

Baked Denver Omelette 

I found myself with 2 big boxes of Costco eggs after I bought a box, and then my Mom also grabbed me one. That’s a lot of eggs! So I’ve been making this easy bake. 

Ingredients:

  • 1 onion, cut up

  • 1 bell pepper, diced

  • 1 cup cubed ham

  • ½ cup milk

  • 12 beaten eggs

  • S & P to taste

Grab your favorite casserole dish, and throw in the meat and veggies. In a separate bowl, mix the eggs, milk, salt and pepper. Pour egg mixture into the casserole. Bake in a preheated 400° oven for 20 to 25 minutes, until set. 

This is great for any meal of the day, and makes great leftovers for when you’re in a rush.
