Best part? It only has THREE ingredients!!

Easy Peperoncini Crock Pot Beef

INGREDIENTS:

  • Beef Chuck (I get a two pack from Costco and use just one when I make this)
  • Ranch Seasoning (Note: Ranch seasoning is not the very cleanest of ingredients so if you want to use a packet of Italian dressing seasoning that would be a great and dairy free choice)
  • 1 jar 16 oz peperoncini with the juice
  • Optional: Serve with buns and sliced cheese as sandwhiches

DIRECTIONS:

  1. Cover beef chuck in ranch seasoning (or Italian dressing dry rub)
  2. Place beef in crockpot on low setting
  3. Pour jar of peperoncinis (with the juices) over beef
  4. Add an additional jar of water to crock pot (use the empty peperoncini jar)
  5. Cook on low for 6-8 hours
  6. Take meat out and shred on a cutting board
  7. Remove peperoncini stems
  8. Remove half of the liquid from the crockpot and place meat back in

Serve on it's own, with a side salad, as sandwiches, or save for lunches throughout the week.
